Servings: 7 (3/4-cup) servings
Ingredients:
2 apples, peeled, cored, cut into 1/2 inch pieces (2 1/2 to 3 cups chopped)
1 1/2 cups fat-free milk (or substitute non-dairy alternative like almond milk)
1 1/2 cups water
1 cup uncooked steel-cut oats
2 tablespoons brown sugar (or substitute maple syrup or other desired sweetener)
1 1/2 tablespoons butter, cut into 5-6 pieces (optional)
1/2 teaspoon cinnamon
1 tablespoon ground flax seed
1/4 teaspoon salt
Optional garnishes: chopped nuts, raisins, maple syrup, additional milk or butter
Directions:
For fixing this for the 1st time, I would watch your time, since it has not been tested in a Ninja. - Aurelia
Coat inside of 3-1/2 quart (or larger) slow cooker (Ninja)with cooking spray. Add all ingredients (except optional toppings) to slow cooker (Ninja). Stir, cover, and cook on low for approx. 7 hours (slow cooker times can vary). Spoon oatmeal into bowls; add optional toppings, if desired. Store leftovers in refrigerator. Freezes well.
To reheat single servings: Put 1-cup cooked oatmeal in microwave proof bowl. Add 1/3 cup fat-free milk. Microwave on high for 1 minute; stir. Continue cooking for another minute, or until hot.
Recipe can be doubled in 6-quart or larger slow cooker. Increase cooking time 1 hour.

2 cups milk
6 eggs
1 tsp cinnamon
2 Tbs.
Brown sugar
½ loaf bread
2 apples diced
Directions:
Combine eggs, milk, cinnamon, brown sugar and vanilla. Mix well. Dip bread into mixture and place in your Ninja. Once done dipping each piece, pour remaining egg mixture over bread. Take diced apples and sprinkle over bread. Cook on slow Cook Low for 6 hours. Serve with maple syrup.

Ingredients:
½ cup butter
2 Granny Smith apples, cored and chopped
½ cup chopped pecans
½ cup chopped walnuts
½ cup packed brown sugar
½ cup pure maple syrup
1 loaf challah bread (about 1 pound), cut into cubes
6 large eggs
2 cups vanilla almond milk (or normal milk)
2 teaspoons ground cinnamon
1 tablespoon vanilla extract
Pinch salt
Confectioners’ sugar
Directions:
Place butter into pot. Turn your Ninja to Stove Pop High and heat until butter is melted. Place apples, pecans, walnuts, brown sugar, and syrup in pot. Cook uncovered 10 minutes or until apples are tender, stirring often.
Place bread in a bowl. In a separate bowl beat eggs, milk, cinnamon, vanilla extract, and salt. Pour the egg mixture over the bread and stir to coat. Pour bread mixture into the pot and stir. Cover and cook until center is set. Turn to Slow Cook High for 2-3 hours. Turn Ninja pot off. Let stand 10 minutes before serving. (I cooked mine for 3).
Sprinkle with confectioners’ sugar. (If desired, drizzle some additional maple syrup on top.)

2 cups water

1 teaspoon salt
1 cup quick cooking grits
1/2 cup plus 1 tablespoon butter
1/3 cup diced green onions
4 ounces processed cheddar cheese, cubed (suggested: Velveeta)
1/4 teaspoon garlic powder
2 1/2 cups shredded cheddar cheese
1 (10-ounce) can diced tomatoes and green chilies with liquid (suggested: Ro-Tel)
Directions:
Sauté green onions in 1 tablespoon butter for a minute or so. Add remaining ingredients, reserving 1/2 cup cheddar. Turn your Ninja to the Oven setting of 350° for 25 minutes, stirring occasionally. Sprinkle reserved cheddar cheese on top. Add the lid for a few minutes until the cheese melts.

Boil the eggs in the Ninja pot. Cool. Chop eggs. Add mayo and mix with avocado. Add salt and pepper to taste. Mix well and refrigerate.

I did bacon and eggs for one yesterday. Baked the bacon on the rack, would have been better to spray the rack. Wiped the pan out, put some leftover potatoes in the pot with some onions and cooked for a few minutes until browned, then scooted them to the side; broke an egg into the open spot, put the lid on and cooked a couple of minutes. Good.

2 lbs of bacon dumped in the ninja on oven 350° stirred a couple of times.....never had to flip, no stinky bacon house.....never frying bacon again.....I would say it took about 30 minutes mix/stirring every 10 minutes.
It wasn't stated if the lid should be on or off, but I left it on for 10 minutes, then took it off. The bacon did crisp up very nicely and was done in under 30 minutes. I did 1 lb thick bacon. Aurelia

Put the bacon on the rack. I switched to 325°, put the lid on. Probably 20 minutes. It gets a little crisper on stove top but this way it's not sitting in the grease. All depends on how you like your bacon. I love this pot.

Baked Breakfast Oatmeal, Ninja Recipe Book
Hearty steel-cut oats cooked until tender in a mixture of hot milk, maple syrup, butter, vanilla, and spices. No need to stir; the mixture slow cooks perfectly. Sweet, tart dried cherries are the perfect finish.
Prep: 15 minutes - Cook: 2 hours, 10 minutes – servings: 4
Ingredients:
4 cups milk
4 tablespoons pure maple syrup
2 tablespoons butter, cut up
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
Pinch salt
1 cup uncooked steel-cut oats
1 cup dried cherries
Directions:
Stir milk, syrup, butter, vanilla extract, cinnamon, nutmeg, and salt in crock. Set to Stove Top High. Cover and cook 10 minutes or until butter is melted.
Stir in oats. Set to Slow Cook High for 2-3 hours. Cover and cook until oats are tender and mixture is creamy. Stir in cherries.
Serving Tip: Try adding cut-up bananas, apples, pears, or raisins. For creamier oatmeal stir in a touch of milk with each serving.

Baked Nest Eggs - adapted from 'Scotty's Nest Eggs' in “The Best of The Best” - recipes from The Best of Bridge.
Ingredients:
For each nest:
1 slice or2 of Black Forest ham
1 egg
1 Tbs. cream
sprinkle with your choice of grated cheese
sprinkle with dried basil
Directions:
Turn the Ninja to the Oven setting of 350°F. These are dry baked.
I used a silicone muffin tin which fits on the Ninja rack perfectly. Line with ham and break egg over the top. Add cream and sprinkle with cheese and basil. Bake for 15-20 minutes. These are very tasty. A great low carb, high protein breakfast!
Leftovers can be heated up in the microwave and taste great!

Ingredients:
1 banana
2 eggs
Cinnamon, optional
Directions:
Smash the banana in a bowl and add the eggs. Mix until it has the consistency of a thick applesauce. (I had some chunks which were cool).
Please note - I added some cinnamon to the mixture prior to cooking.
Turn your Ninja to Stove Top Medium and heat up the unit. Pour in same batter for your pancake.
Cook on Stove Top Medium 2-3 minutes. You will see the edges get lighter and begin to set to turn.
I served it with a smear of Nutella. It was very good.

Once eggs (scrambled, whites, substitute) are poured in, cook for a few minutes then add water to the pot to create steam cooking. (Eggs won't cook well otherwise). Cover and cook for several minutes. Check eggs for "doneness" by poking centers. Add more water if not done.

Ingredients:
1 lb of sausage
1½ oz pork gravy mix (packaged Pioneer Brand Peppered Sausage Gravy Mix, or your favorite brand)
1 cup cheddar cheese, shredded
6 eggs
½ cup milk
Salt and pepper to taste
1 can 8 oz Pillsbury Grand’s Biscuits
Directions:
Turn your Ninja to Stove Top High and brown the sausage. Drain and wipe out pot. Turn your Ninja to Oven setting of 350°. Spray your oven safe cook ware, (or your Ninja baking pan) with PAM, or your choice of spray. Take the biscuits and break into 1” pieces and line the bottom. Scatter sausage over biscuits. Sprinkle on cheddar cheese. Whisk eggs and milk with salt and pepper. Pour over the pan mixture. Mix the gravy mix according to directions and pour over all. Place the rack in your Ninja and put the pan on the rack. Add Lid. Bake for 30-45 minutes.

Just made the best homemade blueberry pancakes ever!
Pancake Mix:
6 cups all purpose flour
3 Tbs. baking powder
2 tsp baking soda
¼ cup granulated sugar
1 tsp salt
Directions:
Mix it all together with a whisk and keep it in an air tight container. I put it in a Lock & Lock.
Pancake Directions:
Mix 1 cup of mix with 1 cup of milk (I used buttermilk) and one egg. I also added ¾ cup of fresh blueberries. Makes 4-6 pancakes.
Cook in Ninja on Stove Top Medium/High till they bubble then flip over.

Ingredients:
1 pound Farmland sausage
1 dozen eggs
dashes of hot sauce, to taste
1 small can diced green chilies, drained
2 tablespoons salsa
1 cup shredded cheese
salt and pepper, to taste
10 soft taco size tortillas
Directions:
Turn the Ninja to Stove Top High. Brown and crumble the sausage. Drain any excess grease. Scramble the eggs with a couple dashes of hot sauce. Stir into the Ninja pot with the sausage. Add the green chilies and salsa. Continue stirring until done. Stir in the shredded cheese at the end to melt. Season with salt and pepper, to taste. Place your desired amount on the tortillas. Roll up and wrap individually in Saran Wrap. Keep in the refrigerator for a couple days. Microwave unwrapped for about 1 minute or so. I love my Ninja!

Ingredients:
½ small stick of hot breakfast sausage
2 cups of frozen cubed potatoes with onion and green pepper, (O’Brien Potatoes)
5 beaten eggs
½ cup of cheese
Salt and pepper to taste
Flour tortilla shells
Hot sauce, optional
Directions:
One of our favorite breakfast meals. I fried the sausage first on Stove Top High. Remove and drain on a paper towel. Add the potatoes still using the Stove Top High setting and place the lid. Stir occasionally, until done and browned to your liking. Pushed potatoes to the side and pour in the eggs. Sprinkle with salt and pepper to taste. Scramble them around until whatever doneness you like. Add the sausage back to the Ninja and top with cheese. Stir gently until cheese is melted. Wrap in your flour tortilla shells. My husband likes to spread a little hot sauce inside of his then roll it up.
I used to make this in my electric skillet but I found it cooks so much quicker in my Ninja. It was very good and such a quick clean up.

Jimmy Dean country mild sausage
1 dozen eggs
1 1/2-2 cups. Shredded cheese of your choice
soft burrito shells
salsa or gravy
Directions:
Brown sausage on Stove Top Medium. Drain excess grease. After browned, add whisked eggs. Turn to Stove Top Low. Stir often. When eggs are almost done, add cheese of your choice. Watch and stir as needed until melted. When done, spoon into soft burrito shells. Top with salsa or gravy. I just got my ninja for Christmas. Luv this group! I brought it to the cabin for our new year’s trip to avoid bringing a pan set. I made my breakfast burritos in it and it worked out perfectly!

Ingredients:
1 large jalapeño, diced
Simply Potatoes brand diced potatoes with onion
Breakfast meat of your choice
4 beaten eggs
Butter
1 Tbs. olive oil
Flour tortillas
Shredded cheddar cheese
Salsa or Picante sauce
Directions:
On Stove Top Medium, add olive oil and brown the potatoes.
Add the Jimmy Dean turkey sausage crumbles and cook an additional few minutes. I like Jimmy Dean pre-cooked crumbles since I'm pressed for time.
Turn Ninja down to Stove Top Low. Add a pat of butter and toss in diced jalapeños and cook for 2 minutes.
Pour in the beaten eggs. Turn Ninja off and let the eggs cook with the residual heat. Scramble eggs until done.
For the tortillas: Place a damp paper towel on a plate & place tortillas on them making sure to cover them. (Important: Ensure the paper towel is both under the tortillas and on top....if you do this with no paper towel under them, the steam will make them too wet.)
Microwave for 45 seconds to warm and soften them.
Add the scrambled eggs, potatoes, sausage and jalapeño. Sprinkle shredded cheddar cheese, fold and eat!

Ingredients:
1 package of Original Jimmy Dean fresh patties (8 patties)
1/2 cup chopped Red Pepper
1/2 cup chopped Green Pepper
1/2 cup chopped Onions
1 Tbs. of garlic
8 XL eggs
8- 8" whole wheat wraps
1 cup shredded Monterey Jack Cheese
Salt & pepper to taste
Directions:
Brown sausage on Stove Top High in the Ninja.
Break apart the sausage while cooking.
When the sausage is cooked, add garlic, onions and sauté till translucent.
Then add red peppers, green peppers and sauté until cooked.
When sausage filling is cooked, push filling to one side of the pot and add beaten eggs to the other side and cover for 1 minute. Lift lid and stir egg mixture until cooked.
When eggs are cooked, mix egg and filling together and sauté to mix. Add the cheese over the filling and stir together.
Turn to Stove Top Low and cover for 2 minutes.
To wrap - place equal amount of filling on each wrap and roll up. Enjoy.

Turn your Ninja to Stove Top High and brown some breakfast sausage with onion and bell pepper. I diced up some leftover curly fries because I didn't have any potatoes. Turn you Ninja to Stove Top Medium or Low. I scrambled some eggs and milk and poured it in. After the eggs set, I topped with freshly grated cheddar and let it melt.

Directions:
Browned sausage links on Stove Top Medium. Dice. Add 1/3 bag of Pepperidge Farms croutons. Beat the eggs with splash milk. Pour over croutons & sausage. Add shredded cheese on top. Turn your Ninja to Oven setting of 300° and bake for about 20 minutes; until sides and bottom are brown and egg is cooked through the middle. Add crushed pepper.
So many possible variations, I think I will add green peppers & onions next time.

Not sure what you'd call this but it was a great breakfast. On Stove Top High I browned 4 Jimmy Dean sausage patties then removed from pan and crumbled. Melted ½ stick butter then added 2 cups frozen shredded hash browns and some chopped onion. Cooked those until done and topped with a cup of shredded cheese. I beat 4 eggs, added the sausage, 2 chopped small sweet peppers and a little cilantro and poured over the potatoes and cheese. Cook on Stove Top Low until eggs are set. Slice into squares. The potatoes formed a crust. Was quite good.

This morning made a Breakfast Casserole. Line the multipurpose pan with 3 pieces of bread - 2 whole and cut the other one in half. On top of that, sprinkled left over sausage and bacon on it and some shredded cheese, (your preference, I used cheddar). Then I beat 6 eggs and added a pinch of salt and pepper and poured over the top. Placed on the pan on top of the rack. Turn your Ninja to 350° for 30 minutes - it was Delicious
I did put water in the bottom of the Ninja just because I like to but you shouldn't have to. (1 cup water for every 10 minutes of cooking time.)

Ingredients:
2 cups frozen shredded hash browns
1 dozen eggs
1/4 cup milk
1 lb ground sausage
Cheese of your choice
1/4 cup vegetable oil
Directions:
Brown sausage on Stove Top High; (chop into pieces) and remove from the pot. Leave the sausage grease in pot. Add the oil and heat. Brown the hash browns in the oil. In a bowl, scramble the eggs with milk. Stir the sausage and eggs into the pot with the hash browns. Cover. Turn your Ninja to Oven setting of 350° for 20 minutes. Turn off your unit. Add the cheese to the top. Cover and let set for 5 minutes before serving.

Ingredients:
1 lb. bacon
8 oz diced ham
Diced onion (1 medium)
Diced green bell pepper (2)
2 lb. frozen shredded hash browns
3 cups shredded cheddar
12 eggs
1 cup of milk
Salt, pepper, garlic, ground mustard, and Sriracha
Directions:
Cook bacon on Stove Top High to likeness. Take out and cool. Then chop. Cook onion in bacon drippings on Stove Top High for 4-5 minutes with a little salt. Drain on paper towels. Wipe out the Ninja.
Making 3 layers, starting with 1/3rd hash browns, followed by 1/3rd each: onion, bell pepper, ham, bacon, cheese. Season each layer with salt, pepper and garlic.
Beat the eggs. Add in milk. Season with salt, pepper, 1-2 tsps. ground mustard and Sriracha to taste. Stir. Pour over the hash brown mixture.
Cook on Slow Cook Low for 3 hours. The Ninja will switch to Auto Warm. (I kept it warm for 3 hours.) It was done and very moist. (Next time I will try Slow Cook Low for 4 hours so I’m not getting up at 3 am to put it on.)
I prepped the hash brown layers in the Ninja and refrigerated. The eggs were prepped separately. I refrigerated both until I got up in the middle of the night and poured the eggs over all.
Some people ate it as is; some added ketchup; some more Sriracha; some Japanese steak house sauce. Everyone enjoyed! You could easily switch out veggies and meats to your taste and mix it up.
Easily serves 8 adults with good size portions.

½ cup of leftover diced ham

1 can of biscuits, (cut each into 4 pieces and roll into a ball)
1 lb bacon, (or use the precooked)
4 green onions, chopped

Directions:
If using eggs, whip before adding.
Spray cooking spray inside the bag. Add the ingredients to a cooking bag. Pour in your eggs and mix until well coated.
I put the large pyramid mat on the bottom of the Ninja pot. Add about a cup of water around the pyramid mat. Place the bag on the mat.
Turn your Ninja to the Oven setting of 375°F. Place the lid. I think it took about 40 minutes to cook through. I just kept watch.

whole wheat tortillas

sour cream
fresh chopped tomatoes
Directions:
Turn your Ninja to Stove Top High. Breaking up the sausage, onion, peppers, mushrooms and salsa. Cook until meat is cooked through . Do not add the lid. When cooked through, move to one end of the Ninja and pour in your beaten eggs. Stir eggs until scrambled through. Stir into the meat mixture. Let any liquid evaporate. Turn off the Ninja and take out the mixture. Place in a bowl and set aside. Wipe out the Ninja pot with a clean paper towel and return it to the base. Pour a layer of mild enchilada sauce to the bottom of the pot. Soften tortillas in micro a few second if needed to make rolling easier. Place some mixture in each tortilla and roll. Add to the Ninja pot. When finished top with the rest of the sauce and grated cheese.
Turn your Ninja to the Oven setting of 350°F for 20 minutes. Place the lid when cooking.
Serve topped with avocado salsa Verde, sour cream and fresh chopped tomatoes, or your choice of garnish.

I really love my Ninja!!! Makes cooking on the truck so much easier. I toss whatever veggies I have in a little olive oil add salt, pepper, & garlic on the Stove Top High. Fried Potatoes, Fried Potatoes with Ham, Breakfast Strata
Fried Potatoes
Ingredients:
3 medium potatoes diced
½ - ¼ diced onion
2 oz diced portabella mushrooms (had to hide the fact they were in there) - (can use any mushroom or omit)
½ diced sweet pepper (I used the bottoms of a yellow, orange and red) (any pepper or peppers will do)
¼ tsp black pepper
½ tsp salt
1 Tbs. oil
Directions:
Add all ingredients to your Ninja and turn to Stove Top Medium. Cook for 10 minutes, stirring occasionally. Potatoes are done when brown to your liking.
Fried Potatoes with Ham:
Directions:
Add 1 think slice of diced ham or up to 1 cup diced to potatoes. Continue to cook on Stove top Medium until ham starts to brown.
Breakfast Strata:
Beat 4 eggs, (I prefer Brown Cage Free)
add to beaten Eggs:
¼ to 1/3 cup milk
¼ tsp garlic salt
1/8 tsp black pepper
¼ tsp salt
Directions:
add egg mixture to potato and ham. Cover and turn down to Stove top Low and cook for 10 minutes. Enjoy!!
I invented mine to a serving plate but you can also...
add cheese on top if you wish but not needed. Just sprinkle on top and turn off your Ninja. Place the lid for about 2 minutes and serve immediately.
*change up the meat or add: sausage, bacon, Tofu, even chicken*

Precooked sweet potatoes
3 eggs, beaten and divided
jalapeno popper cream cheese mix
2 cups water
Directions:
This made 2 omelets. Spray tart pans (or something similar) with PAM. Add precooked sweet potatoes diced up in bottom of each pan. Add the divided eggs between the 2 pans and dot with jalapeno popper cream cheese mix. Add 2 cups of water to the pot and place pans on the rack. Turn to the Oven setting of 400°, and bake for25 minutes or until knife comes out clean.

2 minced jalapenos

Directions:
Mix the ingredients together & unrolled 1/2 tube of crescents keeping 2 of the crescents together, pinching together the seams. Spread mixture over & rolled up jellyroll style. Slice like you do the tortilla roll ups. Do the same with 2 more of the crescents. Turn your Ninja to the Oven setting of 350* and bake about 20 minutes, or until browned.

I placed the shell in the Ninja on the rack. I put the cheese on the shell while on Oven mode of 325° to let the cheese melt. While the cheese was melting, I scrambled my eggs on the regular stove and added some spinach while scrambling. I placed my cooked eggs on the shell with the melted cheese. I then removed the rack put a little butter on the bottom of the ninja and placed the shell in the Ninja to close it. I held it down with a spatula when it was brown I took it out.

I used garlic infused canola oil to saute onions, green peppers and bacon pieces on Stove Top High for about 10 minutes. I turn it down to Stove Top Medium at about 7 minutes into cooking the onions and green peppers, then add the eggs and some cheddar cheese. Use a Teflon coated spatula to stir and scramble everything together. The total time was under 25 minutes and the toast was just popping up as we hit the dock door.

Turn Ninja to Stove Top High and fry the bacon. Remove the bacon and pour off most of the grease.; or pour out all of the grease, and wipe the pot. Crumble, when cool. Sauté the vegetables in vegetable oil, if not using a little of the bacon grease. If you have fresh, use them; (mushrooms, peppers, onions) or you can also use a frozen fajita vegetable mix. You can also add some hash browns. (Crystal Farms refrigerated regular or southwest style), or your preference. Switch to Stove Top Medium, and stir occasionally. When potatoes are browned, switch to Stove Top Low and add the eggs, salt, pepper and your favorite seasonings. When set, stir in the crumbled bacon, and sprinkle on some sharp cheddar.
I've also added a can of RoTel tomatoes & chilies, drained. If you omit the potatoes (or use very little), stick to the veggies, turkey sausage, egg whites, and low fat cheese you can cut a lot of calories from this dish and still get your proteins. You can also make a big batch and refrigerate the leftovers.

Well dinner tonight was delish! We had breakfast for dinner (hubby's request) so I decided it would be a one pot wonder in the Ninja. I just added in what I had on hand & I didn't measure. Here is what I did & it doesn't have a name so I'll call it "breakfast Skillet"
Ingredients:
Spicy Italian sausage
Chopped onion
Chopped Orange Bell Pepper
Frozen spicy potato wedges (I used McCains)
Eggs (I used 8 eggs)
Spices of your choice (I used a garlic onion blend)
Chopstir the sausage on Stove Top High. Remove grease drippings from pan.
Add chopped onion & bell pepper. Add in your choice of spices. Cook just until onion & pepper are a bit soft & add potato wedges. Cook until potatoes are hot through. Whip eggs & pour over mixture.
Switch Ninja to Oven setting of 350° & cook until eggs are done. Approximately 20 minutes. Serve with toast!
**Added comment** I used potato wedges because that is what I had on hand. I found the wedges to be a bit too big so next time I would use the smaller cubed variety.

4 cups quick cook oats
1 Tbs. cinnamon
¼ cup brown sugar
½ stick butter
Directions:
Turn your Ninja to Stove Top High to boil water. Add oats and stir. Turn off the Ninja.
Add cinnamon and brown sugar, stir. Add the butter on top and let it melt, then stir. Scoop into a bowl and add milk. (We use fat free). Next time I'm going to add some chopped pecans or walnuts and use almond milk.

Ingredients:
1 bag frozen Hash browns (26 ounces)
12 eggs
1 cup milk
1 tablespoon ground mustard
16 oz rolled sausage or bacon
Salt and pepper, to taste
16 oz shredded cheddar cheese
Directions:
Turn your Ninja to Stove Top High and fry the bacon and / or sausage, drain grease. Remove bacon to cool. Take the Ninja pot out of the unit, and wipe or wash out. When cooled and dry, spray the Ninja pot and spread hash browns evenly in bottom. Crack the eggs in a large bowl and mix well using a whisk. Add the milk. Sprinkle in the ground mustard, salt and pepper. Add meat to top of the hash browns. Now, is 16 ounces of shredded cheese enough? Maybe? Probably! Throw the whole bag in there! Mix it all up well. Or good, depending on where you're from.
Pour egg mixture on top of everything, using a wooden spoon to spread it out evenly. Turn your Ninja to slow Cook Low for 7-8 hours.
That’s it! Now go to bed!
**So, I let it cook for 6 hours and 30 minutes. It turned out wonderful. I only used 8 ounces of cheese due to an error in shopping lol, next time I won't make that mistake. Some people are still sleeping here, so I will let it cook for another 90 minutes so it reaches the 8 hour mark and see how it turns out.
So it didn't make it to 8 hours. Everyone else woke up to the smell and now it's all gone it was wonderful all the way to 7¼ hours on Slow Cook Low.

Cheesy Baked Hash Brown Patties
Serves: 9
Ingredients:
4 red potatoes
½ cup butter, melted
1 cup cheddar cheese, shredded
2 eggs, whisked
¼ cup chives, chopped
1 tablespoon garlic salt
1 teaspoon oregano
½ teaspoon pepper
oil – for Ninja pot
Directions:
Peel and grate the potatoes.
Drop shredded potatoes into a large bowl of ice water to remove surface starch.
Strain or squeeze potato shreds and transfer to a large bowl.
Add butter, cheese, eggs, chives, garlic salt, oregano, and pepper in with the shredded potatoes. Mix together.
Take a handful of the mixture and pack it on a baking sheet into desired hash brown shape.
Turn the Nina to Stove Top High. Add a little oil. Brown on both sides until crispy, turning gently. Allow to cool for 5 minutes.
Serve warm and enjoy!

Cheesy Eggs
Ingredients:
3-4 cups cheese

¾ cup dried tart cherries
1 apple, peeled and grated (approximately 1 cup grated); or ½ cup unsweetened applesauce
2 cups unsweetened vanilla almond milk
1½ cups water
1 cup uncooked steel-cut oats
2 tablespoons brown sugar
1½ tablespoons butter, cut into 5-6 pieces, optional (omit or substitute margarine for lactose-free, vegan)
½ teaspoon almond extract
1 tablespoon ground flax seed
¼ teaspoon salt
Optional garnishes: toasted sliced almonds, maple syrup, additional almond milk or butter
Directions:
Coat inside of the Ninja pot with cooking spray. Add all ingredients (except optional toppings) to the pot. Stir. Cover and cook on Slow Cook Low for 7 hours. Spoon oatmeal into bowls; add optional toppings, if desired. Store leftovers in the refrigerator. Freezes well.
To reheat single servings: Put 1 cup cooked oatmeal in microwave proof bowl. Add 1/3 cup almond milk. Microwave on high for 1 minute; stir. Continue cooking for another minute, or until hot.
Recipe can be doubled in the Ninja. Increase cooking time 1 hour.
Use regular steel cut or Irish cuts; not rolled or old fashion.

Chunky Corned Beef Hash, By: Betty Link Jordan
I saw this recipe this morning in the Savannah news. I made it for breakfast - great way to use up that leftover corned beef that we all cooked on Monday. It turned out great and we loved it. Once the hash was about done, I scooted it to the side and did eggs for us on the other side. Didn't take time to take a picture but it did turn out great! I hope I can remember to do this again when I cook corned beef and cabbage!
I used frozen hash browns that are cut in little squares like what the picture shows above. I'm all about easy!
Serves 4
Ingredients:
2 tablespoons bacon drippings, unsalted butter, or vegetable oil
1 cup (about 1 medium) yellow onion, peeled and diced small
2 cups (about 1 pound) potatoes cut in 1/2 inch dice
1 large clove garlic, minced
2 cups cooked corned beef cut in 1/2 inch dice
1 tablespoon fresh thyme leaves or 1 teaspoon dried
½ cup thinly sliced green onion
Worcestershire sauce
Salt and whole black pepper in a mill
1 tablespoon chopped fresh parsley
4 large eggs, optional
2 tablespoons white wine vinegar (optional: only if poaching eggs)

1. If serving with poached eggs, put 2 inches water in large saucepan, cover, and bring to a simmer over medium heat. If not serving with eggs or if cooking eggs in hash (see step 4), omit this step.
2. Melt fat in large nonstick skillet over medium heat. Add onion and sauté until translucent and softened but not colored, about 3-4 minutes. Add potatoes and toss to coat with fat. Sauté until hot, tossing, and then add splash of water, cover, and cook, uncovering and stirring occasionally, until potatoes are barely cooked through.
3. Uncover, return heat to medium, and add garlic. Toss well and cook until potatoes are beginning to color. Add corned beef, thyme, and green onion, and season to taste with Worcestershire, salt, and pepper. Press flat with spatula. Cook until bottom is brown, about, 4 minutes, then turn in chunks with spatula and brown the second side, pressing chunks together, about 3-4 minutes longer. (If liked, eggs can be cooked directly in hash: make 4 wells in hash after second side begins to brown and break 1 egg into each well. Cover and cook until eggs are done to your liking.) Turn off heat. Turn out onto warm serving platter, sprinkle with parsley, and serve at once with green salad and bread of choice.
4. If poaching eggs, have water bubbling briskly but not at hard boil. Add vinegar. Break eggs 1 at a time into small bowl and slip into pan, gently folding egg in on itself with slotted spoon. Poach until done to taste, about 1 ½-2 minutes. Lift eggs out with slotted spoon, gently blot with paper towel, and lay on top of corned beef and serve at once.
Making it your own and adapting to what you have on hand
As I said, the great thing about hash is that it’s so adaptable. You can add other leftovers from the boiled dinner, other ingredients (depending on your personal tastes), spice it up, tone it down – you get the idea. Here are a few notes and variations:
Some cooks like to add green or red bell pepper (or a little of both): allow 1 large sweet bell pepper stemmed, cored, trimmed of inner membranes, and diced, or half a red and green pepper.
Leftover potatoes: if you have leftover potatoes that you’d like to use instead of raw potatoes, cut them into ½ -inch dice while they’re still cold. You will need 2 cups. Omit the steaming stage in step 2, and add the potatoes to the pan along with the garlic in step 3.
Notes for cabbage and carrots from corned beef and cabbage: roughly chop or dice the cabbage and carrots and allow about a cup of each for the amounts given here. Add them after the potatoes begin to color in step 3 and let them heat through before adding the corned beef.

I made a corned beef brisket for a Father's Day weekend treat for my other half. Turn the Ninja to Slow Cook Low for about 10 hours, or use the same time and cook overnight. Add 1 cup of water with the spice packet that comes with the meat.

Directions:
Stove Top High. I put hash in pot and browned for 4 minutes, mixed sour cream and eggs a little salt and pepper in bowl, mixed in pot, covered and cooked for about 6 minutes, (I did plug hole when I added the egg mixture, came out even better than in the big oven. Eggs so light and fluffy). When almost set, sprinkled in cheese and cooked for another few minutes until cheese melted, yummy!

6 eggs
1 cup of milk
1/2 cup dried cranberries
1/2 to 1 tsp cinnamon
4 slices Texas toast
1/2 tablespoon sugar
Directions:
Spray the Ninja utility/cake pan with PAM.
Beat eggs, milk, sugar & cinnamon together. Tear bread into pieces. Sprinkle in cranberries. Mix all ingredients together & pour into the Ninja cake pan. Cover & place in refrigerator overnight. In a.m. preheat Ninja to 350°, 10 minutes. Place pan on rack, and bake 45 minutes or until knife inserted comes out clean.

2 strips bacon
4 Tbs heavy cream or half and half
4 eggs
salt and black pepper
ground nutmeg
1 cup water
Directions:
Place bacon strips into pot. Set to Stove Top High. Cook uncovered 10 minutes or until bacon is crisp on both sides. Remove bacon from pot and drain on paper towels. Crumble bacon. Spoon 1 Tbs. cream into each of 4 custard cups. Crack 1 egg into each cup. Season with salt, black pepper, and nutmeg. Pour water into pot. Place roasting rack into pot. Place custard cups on rack. Set Oven to 400° degrees for 10 minutes. Cover and cook until eggs are set, checking after 5 minutes for softly set. Sprinkle with bacon.

2/3 cup heavy cream
1 cup Mexican cheese
1/3 cup salsa (we didn't use)
1 package taco seasoning (or homemade)
Directions:
Turn the Ninja to Stove Top High. Brown the meat. Drain any grease if needed. Add seasoning and onions. In a bowl whisk eggs and heavy cream. Turn the Ninja to the Oven setting of 350°F. Pour in egg mixture and cheese, stir, cover and set timer for 15 minutes. Check and cook 5 minutes longer, if needed.
Optional add ins: anything taco! Black olives, jalapenos, tomatoes, etc. Top with sour cream and guacamole!

I just did double baked eggs in large and small ceramic ramekins covered in shredded Colby jack cheese covered, on Oven setting of 400° for 15 minutes. The large one was done; the small one was not. Double one was yummy and good sunny side up. Add 1 cup of water in bottom of crock, with the ramekins on the rack. One other note, I did spray 1 ceramic with Pam & 1 was not. The one without did stick! I also used “ove gloves” to remove ceramics.

Turn your Ninja to Stove Top High and saute onion and potatoes in butter, seasoned with salt until soft. Add the chicken, eggs, milk, salt, pepper, croutons and cheese. Stir. Turn to Oven setting of 250°and bake for about 30 minutes. The bottom was nice and brown.
** Next time I'm going to add cottage cheese. I love cottage cheese scrambled eggs. **

Ingredients:
4 eggs
Bacon

Directions:
Turn your Ninja to Stove Top High and cook your bacon until done. Remove bacon, pour out the grease, and wipe out the pot. Crumble when cool. Add 2 cups of water to the Ninja pot. Spray your silicone baking pots with Pam and add 2 eggs, seasonings, bacon and cheese per pot. Place your rack and add the baking pots. Cover with lid. Baked 400°, for 20 minutes. They came out perfect. Topped with more cheese and salsa.
**Added comment by: Mom – Jennifer put the lids on the pots and the Ninja lid. You actually only need the Ninja lid. Your preference!
Also… you can add onions, green peppers, etc., when adding your ingredients. She just doesn’t like them!

Ingredients:
1 package (9.6-ounce bag) Jimmy Dean Sausage Crumbles
2 packages (2.64 oz each) McCormick’s Original Country-Style Gravy Mix (or McCormick’s Sausage-Flavored Country Gravy Mix)
4 cups cold water
Salt, pepper, garlic powder, rubbed sage – to taste (optional)
Directions:
Place entire bag of sausage crumbles in the Ninja pot and turn on Stove Top High. Let this cook until the sausage starts to sizzle. Add both packets of the gravy mix to the sausage in the pot and gently stir to coat all of the sausage pieces. Pour in the cold water. Stir to combine. Continue to stir the mixture regularly until the mixture starts to thicken, being sure to stir out any lumps and not letting the gravy stick to the bottom. Once the gravy thickens, turn the Ninja to buffet. Add any extra seasonings to the gravy to taste and stir to combine. Put the lid on the Ninja. Stir the gravy occasionally to ensure that it doesn't stick to the bottom. The buffet setting will keep the gravy warm while you bake your favorite biscuits or toast to serve the gravy over.

Ingredients:
Bagels of choice (we used everything bagels)
6 eggs
3 slices cheese
Splash extra version olive oil
Salt & Ground Black Pepper - to taste
Prep:
Mix eggs, seasoning, and cheese (break cheese into bite size pieces) - set to the side
Slice bagel in half - set to the side
Preheat the Ninja on Stove Top High for 5 minutes
Recipe:
1) Add bagel halves to the Ninja and toast them to taste. Once done, remove from the Ninja.
2) Add the egg mixture to the Ninja pot. Cook until done. Remove, and turn off the Ninja.
3) Add bottom portion of the bagel to the Ninja pot. Top with the eggs. Place the top bagel to make your sandwich. **this is to lightly reheat the bagel in case it cooled down.

Made a super easy and delicious breakfast in my Ninja today:
Spray muffin pan lightly with non stick/oil
Line with 2 slices of thin sliced deli ham
Put in some shredded cheese
Pour in egg beaters
Lightly salt and pepper to taste (and I added dill because I like it)
Put muffin pan on the rack
Set your Ninja to 375°F. Cook for 30 minutes

Tater tots – 3 per tin
Your choice of vegetables
bacon - cooked & crumbled
Eggs, scrambled – amount for your family
Directions:Spray your muffin tin with your choice of non-stick spray or oil. Place 3 tots per tin. Turn your Ninja to the Oven setting of 425°F and place your rack, pyramid mat or red silicone rack. Place the tin on top. Place the lid. Cook for 10 minutes. After time is up, carefully sprinkle in the vegetables of choice. Pour your scrambled eggs so the tin is about ¾ full. Sprinkle on the bacon. Place the lid. Bake for an additional 25 minutes.
When cooled, wrap and you will have for quick breakfast to reheat for on the go mornings during the week.

1/3 cup of milk (I use almond milk)
Directions:
Grease a glass dish (mid sized baking dish) and poured the mixture in. Set the rack in the Ninja. Add two cups of water and placed the glass dish on the rack. Set in on Oven 325° degrees for 50 minutes. It was delish!!! Can't wait to make it again and add more 'stuff' to it. I love my Ninja!!!

OK.. I've said it before, but I need to repeat it!!! If you haven't fixed "eggs" in the Ninja, then it is a must! Scrambled come out so fluffy! If you like over easy, medium or hard, they come out perfect and in less time than on the stove. I do preheat on Stove Top High for about 5 minutes; then turn to Stove Top Low. Add a little butter and wonderful, absolutely wonderful!!! In my 2nd Ninja, I browned the ham and hash browns and moved to Buffet setting while fixing the eggs. Bob had the toast and coffee ready as the eggs were finishing up.

Bring one jar of marinara or spaghetti sauce to a boil in the Ninja. Drop as many eggs as you would like into the sauce. Do not stir. Cook them for about 8 minutes on Stove Top Medium. (If you have the Ninja 4, I suggest bringing to a boil on Stove Top High and reduce to Stove Top Low. Increase the cooking time by a few minutes). That's it! You have a complete meal. There are many options for this meal. You can add hamburger, onion, and garlic and brown on Stove Top High before adding the sauce. (Drain excess grease if necessary before adding sauce). It is also good with cheese on top. I haven't tried it with veggies but that would be yummy too.

Oh man, this was so good I made it two days in a row. It's a spinach and egg and cheese dish that's so rich I could only eat two pieces of it.
Ingredients:
1 pound of breakfast sausage
2 medium onions, chopped
1 red bell pepper, chopped
can of spinach, well drained
8 jumbo eggs
4 oz of shredded sharp cheddar cheese
½ cup of feta cheese.
two 12 oz packages of bacon that I cooked and crumbled, an alternative to the sausage
Directions:
Turn your Ninja to Stove Top High and brown the sausage until done. Break up like you would for chili or Sloppy Joe's. Turn off Ninja. Drain well and place back into the Ninja pot. Add the onions and bell pepper. Make sure the spinach is well drained and add. Mix well
Crack the eggs into a bowl, and whip with a fork for at least a minute. Slowly pour over the ingredients in the pot. Pick the pot up and jiggle gently until everything is evenly spread out. Top with 4 oz of shredded sharp cheddar cheese and half a cup of feta cheese.
Cook for 2.5 hours on Slow Cook Low. This smells great while cooking. This is good coming out of the pot, and even better for breakfast the next morning.
Letting it sit in the fridge overnight makes it even more flavorful. The second day I used two 12 oz packages of bacon that I cooked and crumbled, and it was just as good as the sausage.
**Added comments by: - S Alfred Baker Parmesan would be good on this. Set the timer, don't go longer than 2.5 hours or the eggs will get tough. And pour the eggs into the other ingredients, don't mix it around after you do this. Pour the eggs in, jiggle it a little and let it be.
**Kathleen Sanden - Just cut up fresh spinach and add, it does cook down. I use fresh spinach in many recipes including the lasagna from the cookbook. It is much milder when it's fresh.

Dip bread slices into milk mixture and then place into pot that was either buttered or sprayed with PAM. Brown each side. (The Ninja will take 2 slices at a time giving you room to turn.) Top with powdered sugar and or syrup.

4 slices of buttered bread (you don’t have to butter it, but I like the richness)
4 eggs, beaten
1 cup of milk
pinch of salt
4 teaspoons of syrup - (I used maple)
cinnamon and sugar mix – amount is your choice

Directions:
Cut your bread and place in the multipurpose pan. Sprinkle your cinnamon sugar mix over all. Pour the egg mixture of: beaten eggs, milk and salt over all and press into the bread to cover and soak into the bread. Place the pyramid mat in the Ninja pot. Place the pan on the mat. Turn your Ninja to 325°F and bake for 40 minutes. A few minutes before serving, sprinkle white sugar over the top.
Easy to make more or less as it’s all in equal quantities! Add some sultanas or chocolate chips to make it more interesting!

1 loaf of French bread, cubed

Beat eggs, milk, cinnamon, and nutmeg together. Put cubed French bread into a bowl and pour mixture over. Place the lid turning the bowl so it all gets absorbed and put in the refrigerator for 6 hours. Pour into the Ninja, and put the brown sugar mixture on top. Turn your Ninja to the Oven setting of 300° for 45 minutes. Turn to Slow Cook Low to keep hot.

6 slices of cinnamon swirl bread, (you can use any bread of your choice)
5 eggs beaten
1 banana
Spray the utility/baking pan and place 2 whole slices of bread and a half slice in the pan. Slice banana and place on top. Add the 2nd layer of bread on top. Pour eggs over bread, lift bread so eggs go under bread and flip if necessary to ensure all bread is coated. Place in refrigerator overnight. Preheat your Ninja Oven to 350° for about 10 minutes. Place your rack and your pan. Bake for 30 minutes. Top with your favorite topping & enjoy.

12 turkey sausage links, cut into small pieces
2 cups broccoli florets, cut into small pieces
Large handful of spinach, chopped up
12 eggs
Splash of hot sauce and a bit of half and half
Garlic salt
Garlic pepper
2 large handfuls of shredded cheese
Directions:
Turn your Ninja to Stove Top High and start browning sausage. After a few minutes add the broccoli and cook together for a few minutes. Add the spinach and continue cooking for a few minutes.
Beat eggs, half and half, hot sauce and salt and pepper.
Add the cheese to the eggs, stir and pour over the meat/veggie mixture
Turn your Ninja to the Oven setting of 400°F. Place the lid.
Cook for about 15 minutes, or until set.

Frittata with Kale, Roasted Red Pepper, and Feta*, By: Jessica Conol
Ingredients:
1-2 tsp olive oil to saute the kale (only 1 teaspoon for the Ninja, but 2 teaspoons to saute on the stove.)
5 oz. baby kale
non-stick spray or oil (to spray the slow cooker if you don't use the Ninja)
6 oz. roasted red pepper (from a jar), diced fairly small
1/4 cup sliced green onion
4-5 oz. crumbled Feta
8 eggs, well beaten
1/2 tsp. Spike Seasoning (or other all-purpose seasoning blend)
fresh-ground black pepper to taste
low-fat sour cream for serving (optional, but good)
Directions:
Wash kale if needed, and spin dry or dry with paper towels. Heat the oil, either in the Ninja on the Stove Top High. When the oil is hot, add the kale and sauté until it's softened into a flat layer, about 3-4 minutes in the Ninja. Turn the Ninja to Slow Cook Low setting.
Drain red peppers and chop into fairly small pieces. Slice the green onions and crumble the Feta. Add the chopped red pepper and sliced green onion to the Ninja with the kale. Beat the eggs well, pour over other ingredients and stir so all ingredients are well-combined. Season with Spike Seasoning and black pepper, then sprinkle on the Feta.
Cook on Slow cook Low for 2-3 hours, or until the frittata is well set and cheese is melted. (I cooked mine for 2 hours and 45 minutes and it was perfect, but I got distracted with a phone call and it may have been done slightly sooner than that. I think the Ninja cooks a little hotter than other slow cookers, so it may take slightly longer if you don't use the Ninja.) Serve hot, with a dollop of low-fat sour cream if desired.
This will keep well in the fridge for several days and can be reheated in the microwave. (Don't microwave too long or it will get rubbery.)

Ingredients:
2 tablespoons canola oil
1 large onion, chopped
1 large green pepper, chopped
4 strips turkey bacon, chopped
½ of a 32-ounce package frozen diced hash brown potatoes(about 3½ cups)
12 eggs
¾ cup low-fat milk
½ teaspoon salt
¼ teaspoon ground black pepper
1 cup shredded low-fat cheddar cheese
Directions:
1. Pour oil into pot. Set to Stove Top High and heat oil. Add onion, green pepper, and bacon to pot. Cook uncovered 15 minutes or until vegetables are tender, stirring often.
2. Stir in potatoes. Cover and cook 5 minutes.
3. Beat eggs, milk, salt, and black pepper in a bowl. Set pot to Stove Top Low. Stir egg mixture and cheese into pot. Cover and cook 10 minutes or until the egg mixture is set.
Ninja Serving Tip:
Serve topped with additional chopped cooked bacon, if desired.

Servings: 7 (3/4-cup) servings
Ingredients:
2 apples, peeled, cored, cut into 1/2 inch pieces (2 1/2 to 3 cups chopped)
1 1/2 cups fat-free milk (or substitute non-dairy alternative like almond milk)
1 1/2 cups water
1 cup uncooked steel-cut oats
2 tablespoons brown sugar (or substitute maple syrup or other desired sweetener)
1 1/2 tablespoons butter, cut into 5-6 pieces (optional)
1/2 teaspoon cinnamon
1 tablespoon ground flax seed
1/4 teaspoon salt
Optional garnishes: chopped nuts, raisins, maple syrup, additional milk or butter
Directions:
For fixing this for the 1st time, I would watch your time, since it has not been tested in a Ninja. - Aurelia
Coat inside of 3-1/2 quart (or larger) slow cooker (Ninja)with cooking spray. Add all ingredients (except optional toppings) to slow cooker (Ninja). Stir, cover, and cook on low for approx. 7 hours (slow cooker times can vary). Spoon oatmeal into bowls; add optional toppings, if desired. Store leftovers in refrigerator. Freezes well.
To reheat single servings: Put 1-cup cooked oatmeal in microwave proof bowl. Add 1/3 cup fat-free milk. Microwave on high for 1 minute; stir. Continue cooking for another minute, or until hot.
Recipe can be doubled in 6-quart or larger slow cooker. Increase cooking time 1 hour.

2 Granny Smith apples, cored and chopped
½ cup chopped pecans
½ cup chopped walnuts

½ cup pure maple syrup
1 loaf challah bread (about 1 pound), cut into cubes
6 large eggs
2 cups vanilla almond milk (or normal milk)
2 teaspoons ground cinnamon
1 tablespoon vanilla extract
Pinch salt
Confectioners’ sugar
Directions:
Place butter into pot. Turn your Ninja to Stove Pop High and heat until butter is melted. Place apples, pecans, walnuts, brown sugar, and syrup in pot. Cook uncovered 10 minutes or until apples are tender, stirring often.
Place bread in a bowl. In a separate bowl beat eggs, milk, cinnamon, vanilla extract, and salt. Pour the egg mixture over the bread and stir to coat. Pour bread mixture into the pot and stir. Cover and cook until center is set. Turn to Slow Cook High for 2-3 hours. Turn Ninja pot off. Let stand 10 minutes before serving. (I cooked mine for 3).
Sprinkle with confectioners’ sugar. (If desired, drizzle some additional maple syrup on top.)

1 1/4 cups milk
1 teaspoon salt
1 cup quick cooking grits
1/2 cup plus 1 tablespoon butter
1/3 cup diced green onions
4 ounces processed cheddar cheese, cubed (suggested: Velveeta)
1/4 teaspoon garlic powder
2 1/2 cups shredded cheddar cheese
1 (10-ounce) can diced tomatoes and green chilies with liquid (suggested: Ro-Tel)
Directions:
Sauté green onions in 1 tablespoon butter for a minute or so. Add remaining ingredients, reserving 1/2 cup cheddar. Turn your Ninja to the Oven setting of 350° for 25 minutes, stirring occasionally. Sprinkle reserved cheddar cheese on top. Add the lid for a few minutes until the cheese melts.

I did bacon and eggs for one yesterday. Baked the bacon on the rack, would have been better to spray the rack. Wiped the pan out, put some leftover potatoes in the pot with some onions and cooked for a few minutes until browned, then scooted them to the side; broke an egg into the open spot, put the lid on and cooked a couple of minutes. Good.

2 lbs of bacon dumped in the ninja on oven 350° stirred a couple of times.....never had to flip, no stinky bacon house.....never frying bacon again.....I would say it took about 30 minutes mix/stirring every 10 minutes.
It wasn't stated if the lid should be on or off, but I left it on for 10 minutes, then took it off. The bacon did crisp up very nicely and was done in under 30 minutes. I did 1 lb thick bacon. Aurelia

Hearty steel-cut oats cooked until tender in a mixture of hot milk, maple syrup, butter, vanilla, and spices. No need to stir; the mixture slow cooks perfectly. Sweet, tart dried cherries are the perfect finish.
Prep: 15 minutes - Cook: 2 hours, 10 minutes – servings: 4
Ingredients:
4 cups milk
4 tablespoons pure maple syrup
2 tablespoons butter, cut up
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
Pinch salt
1 cup uncooked steel-cut oats
1 cup dried cherries
Directions:
Stir milk, syrup, butter, vanilla extract, cinnamon, nutmeg, and salt in crock. Set to Stove Top High. Cover and cook 10 minutes or until butter is melted.
Stir in oats. Set to Slow Cook High for 2-3 hours. Cover and cook until oats are tender and mixture is creamy. Stir in cherries.
Serving Tip: Try adding cut-up bananas, apples, pears, or raisins. For creamier oatmeal stir in a touch of milk with each serving.

Baked Nest Eggs - adapted from 'Scotty's Nest Eggs' in “The Best of The Best” - recipes from The Best of Bridge.
Ingredients:
For each nest:
1 slice or2 of Black Forest ham
1 egg
1 Tbs. cream
sprinkle with your choice of grated cheese
sprinkle with dried basil
Directions:
Turn the Ninja to the Oven setting of 350°F. These are dry baked.
I used a silicone muffin tin which fits on the Ninja rack perfectly. Line with ham and break egg over the top. Add cream and sprinkle with cheese and basil. Bake for 15-20 minutes. These are very tasty. A great low carb, high protein breakfast!
Leftovers can be heated up in the microwave and taste great!

Directions:
Smash the banana in a bowl and add the eggs. Mix until it has the consistency of a thick applesauce. (I had some chunks which were cool).
Please note - I added some cinnamon to the mixture prior to cooking.
Turn your Ninja to Stove Top Medium and heat up the unit. Pour in same batter for your pancake.
Cook on Stove Top Medium 2-3 minutes. You will see the edges get lighter and begin to set to turn.
I served it with a smear of Nutella. It was very good.

Sprinkle on cheddar cheese. Whisk eggs and milk with salt and pepper. Pour over the pan mixture. Mix the gravy mix according to directions and pour over all. Place the rack in your Ninja and put the pan on the rack. Add Lid. Bake for 30-45 minutes.

Just made the best homemade blueberry pancakes ever!
Pancake Mix:
6 cups all purpose flour
3 Tbs. baking powder
2 tsp baking soda
¼ cup granulated sugar
1 tsp salt
Directions:
Mix it all together with a whisk and keep it in an air tight container. I put it in a Lock & Lock.
Pancake Directions:
Mix 1 cup of mix with 1 cup of milk (I used buttermilk) and one egg. I also added ¾ cup of fresh blueberries. Makes 4-6 pancakes.
Cook in Ninja on Stove Top Medium/High till they bubble then flip over.

Turn the Ninja to Stove Top High. Brown and crumble the sausage. Drain any excess grease. Scramble the eggs with a couple dashes of hot sauce. Stir into the Ninja pot with the sausage. Add the green chilies and salsa. Continue stirring until done. Stir in the shredded cheese at the end to melt. Season with salt and pepper, to taste. Place your desired amount on the tortillas. Roll up and wrap individually in Saran Wrap. Keep in the refrigerator for a couple days. Microwave unwrapped for about 1 minute or so. I love my Ninja!

½ small stick of hot breakfast sausage
2 cups of frozen cubed potatoes with onion and green pepper, (O’Brien Potatoes)
5 beaten eggs

One of our favorite breakfast meals. I fried the sausage first on Stove Top High. Remove and drain on a paper towel. Add the potatoes still using the Stove Top High setting and place the lid. Stir occasionally, until done and browned to your liking. Pushed potatoes to the side and pour in the eggs. Sprinkle with salt and pepper to taste. Scramble them around until whatever doneness you like. Add the sausage back to the Ninja and top with cheese. Stir gently until cheese is melted. Wrap in your flour tortilla shells. My husband likes to spread a little hot sauce inside of his then roll it up.
I used to make this in my electric skillet but I found it cooks so much quicker in my Ninja. It was very good and such a quick clean up.

Ingredients:
1 large jalapeño, diced
Simply Potatoes brand diced potatoes with onion
Breakfast meat of your choice
4 beaten eggs
Butter
1 Tbs. olive oil
Flour tortillas
Shredded cheddar cheese
Salsa or Picante sauce
Directions:
On Stove Top Medium, add olive oil and brown the potatoes.
Add the Jimmy Dean turkey sausage crumbles and cook an additional few minutes. I like Jimmy Dean pre-cooked crumbles since I'm pressed for time.
Turn Ninja down to Stove Top Low. Add a pat of butter and toss in diced jalapeños and cook for 2 minutes.
Pour in the beaten eggs. Turn Ninja off and let the eggs cook with the residual heat. Scramble eggs until done.
For the tortillas: Place a damp paper towel on a plate & place tortillas on them making sure to cover them. (Important: Ensure the paper towel is both under the tortillas and on top....if you do this with no paper towel under them, the steam will make them too wet.)
Microwave for 45 seconds to warm and soften them.
Add the scrambled eggs, potatoes, sausage and jalapeño. Sprinkle shredded cheddar cheese, fold and eat!

1 package of Original Jimmy Dean fresh patties (8 patties)
1/2 cup chopped Red Pepper
1/2 cup chopped Green Pepper
1/2 cup chopped Onions

8 XL eggs
8- 8" whole wheat wraps
1 cup shredded Monterey Jack Cheese
Salt & pepper to taste
Directions:
Brown sausage on Stove Top High in the Ninja.
Break apart the sausage while cooking.
When the sausage is cooked, add garlic, onions and sauté till translucent.
Then add red peppers, green peppers and sauté until cooked.
When sausage filling is cooked, push filling to one side of the pot and add beaten eggs to the other side and cover for 1 minute. Lift lid and stir egg mixture until cooked.
When eggs are cooked, mix egg and filling together and sauté to mix. Add the cheese over the filling and stir together.
Turn to Stove Top Low and cover for 2 minutes.
To wrap - place equal amount of filling on each wrap and roll up. Enjoy.

Not sure what you'd call this but it was a great breakfast. On Stove Top High I browned 4 Jimmy Dean sausage patties then removed from pan and crumbled. Melted ½ stick butter then added 2 cups frozen shredded hash browns and some chopped onion. Cooked those until done and topped with a cup of shredded cheese. I beat 4 eggs, added the sausage, 2 chopped small sweet peppers and a little cilantro and poured over the potatoes and cheese. Cook on Stove Top Low until eggs are set. Slice into squares. The potatoes formed a crust. Was quite good.

This morning made a Breakfast Casserole. Line the multipurpose pan with 3 pieces of bread - 2 whole and cut the other one in half. On top of that, sprinkled left over sausage and bacon on it and some shredded cheese, (your preference, I used cheddar). Then I beat 6 eggs and added a pinch of salt and pepper and poured over the top. Placed on the pan on top of the rack. Turn your Ninja to 350° for 30 minutes - it was Delicious
I did put water in the bottom of the Ninja just because I like to but you shouldn't have to. (1 cup water for every 10 minutes of cooking time.)

Ingredients:
1 lb. bacon
8 oz diced ham
Diced onion (1 medium)
Diced green bell pepper (2)
2 lb. frozen shredded hash browns
3 cups shredded cheddar
12 eggs
1 cup of milk
Salt, pepper, garlic, ground mustard, and Sriracha
Directions:
Cook bacon on Stove Top High to likeness. Take out and cool. Then chop. Cook onion in bacon drippings on Stove Top High for 4-5 minutes with a little salt. Drain on paper towels. Wipe out the Ninja.
Making 3 layers, starting with 1/3rd hash browns, followed by 1/3rd each: onion, bell pepper, ham, bacon, cheese. Season each layer with salt, pepper and garlic.
Beat the eggs. Add in milk. Season with salt, pepper, 1-2 tsps. ground mustard and Sriracha to taste. Stir. Pour over the hash brown mixture.
Cook on Slow Cook Low for 3 hours. The Ninja will switch to Auto Warm. (I kept it warm for 3 hours.) It was done and very moist. (Next time I will try Slow Cook Low for 4 hours so I’m not getting up at 3 am to put it on.)
I prepped the hash brown layers in the Ninja and refrigerated. The eggs were prepped separately. I refrigerated both until I got up in the middle of the night and poured the eggs over all.
Some people ate it as is; some added ketchup; some more Sriracha; some Japanese steak house sauce. Everyone enjoyed! You could easily switch out veggies and meats to your taste and mix it up.
Easily serves 8 adults with good size portions.

Spray cooking spray inside the bag. Add the ingredients to a cooking bag. Pour in your eggs and mix until well coated.
I put the large pyramid mat on the bottom of the Ninja pot. Add about a cup of water around the pyramid mat. Place the bag on the mat.
Turn your Ninja to the Oven setting of 375°F. Place the lid. I think it took about 40 minutes to cook through. I just kept watch.

whole wheat tortillas

sour cream
fresh chopped tomatoes
Directions:
Turn your Ninja to Stove Top High. Breaking up the sausage, onion, peppers, mushrooms and salsa. Cook until meat is cooked through . Do not add the lid. When cooked through, move to one end of the Ninja and pour in your beaten eggs. Stir eggs until scrambled through. Stir into the meat mixture. Let any liquid evaporate. Turn off the Ninja and take out the mixture. Place in a bowl and set aside. Wipe out the Ninja pot with a clean paper towel and return it to the base. Pour a layer of mild enchilada sauce to the bottom of the pot. Soften tortillas in micro a few second if needed to make rolling easier. Place some mixture in each tortilla and roll. Add to the Ninja pot. When finished top with the rest of the sauce and grated cheese.
Turn your Ninja to the Oven setting of 350°F for 20 minutes. Place the lid when cooking.
Serve topped with avocado salsa Verde, sour cream and fresh chopped tomatoes, or your choice of garnish.

Fried Potatoes, Fried Potatoes with Ham, Breakfast Strata
Fried Potatoes
Ingredients:
3 medium potatoes diced
½ - ¼ diced onion
2 oz diced portabella mushrooms (had to hide the fact they were in there) - (can use any mushroom or omit)
½ diced sweet pepper (I used the bottoms of a yellow, orange and red) (any pepper or peppers will do)
¼ tsp black pepper
½ tsp salt
1 Tbs. oil
Directions:
Add all ingredients to your Ninja and turn to Stove Top Medium. Cook for 10 minutes, stirring occasionally. Potatoes are done when brown to your liking.
Fried Potatoes with Ham:
Directions:
Add 1 think slice of diced ham or up to 1 cup diced to potatoes. Continue to cook on Stove top Medium until ham starts to brown.
Breakfast Strata:
Beat 4 eggs, (I prefer Brown Cage Free)
add to beaten Eggs:
¼ to 1/3 cup milk
¼ tsp garlic salt
1/8 tsp black pepper
¼ tsp salt
Directions:
add egg mixture to potato and ham. Cover and turn down to Stove top Low and cook for 10 minutes. Enjoy!!
I invented mine to a serving plate but you can also...
add cheese on top if you wish but not needed. Just sprinkle on top and turn off your Ninja. Place the lid for about 2 minutes and serve immediately.

Precooked sweet potatoes
3 eggs, beaten and divided
jalapeno popper cream cheese mix
2 cups water
Directions:
This made 2 omelets. Spray tart pans (or something similar) with PAM. Add precooked sweet potatoes diced up in bottom of each pan. Add the divided eggs between the 2 pans and dot with jalapeno popper cream cheese mix. Add 2 cups of water to the pot and place pans on the rack. Turn to the Oven setting of 400°, and bake for25 minutes or until knife comes out clean.

I placed the shell in the Ninja on the rack. I put the cheese on the shell while on Oven mode of 325° to let the cheese melt. While the cheese was melting, I scrambled my eggs on the regular stove and added some spinach while scrambling. I placed my cooked eggs on the shell with the melted cheese. I then removed the rack put a little butter on the bottom of the ninja and placed the shell in the Ninja to close it. I held it down with a spatula when it was brown I took it out.

I used garlic infused canola oil to saute onions, green peppers and bacon pieces on Stove Top High for about 10 minutes. I turn it down to Stove Top Medium at about 7 minutes into cooking the onions and green peppers, then add the eggs and some cheddar cheese. Turn Ninja to Stove Top High and fry the bacon. Remove the bacon and pour off most of the grease.; or pour out all of the grease, and wipe the pot. Crumble, when cool. Sauté the vegetables in vegetable oil, if not using a little of the bacon grease. If you have fresh, use them; (mushrooms, peppers, onions) or you can also use a frozen fajita vegetable mix. You can also add some hash browns. (Crystal Farms refrigerated regular or southwest style), or your preference. Switch to Stove Top Medium, and stir occasionally. When potatoes are browned, switch to Stove Top Low and add the eggs, salt, pepper and your favorite seasonings. When set, stir in the crumbled bacon, and sprinkle on some sharp cheddar.
I've also added a can of RoTel tomatoes & chilies, drained. If you omit the potatoes (or use very little), stick to the veggies, turkey sausage, egg whites, and low fat cheese you can cut a lot of calories from this dish and still get your proteins. You can also make a big batch and refrigerate the leftovers.

Well dinner tonight was delish! We had breakfast for dinner (hubby's request) so I decided it would be a one pot wonder in the Ninja. I just added in what I had on hand & I didn't measure. Here is what I did & it doesn't have a name so I'll call it "breakfast Skillet"
Ingredients:
Spicy Italian sausage
Chopped onion
Chopped Orange Bell Pepper
Frozen spicy potato wedges (I used McCains)
Eggs (I used 8 eggs)
Spices of your choice (I used a garlic onion blend)
Chopstir the sausage on Stove Top High. Remove grease drippings from pan.
Add chopped onion & bell pepper. Add in your choice of spices. Cook just until onion & pepper are a bit soft & add potato wedges. Cook until potatoes are hot through. Whip eggs & pour over mixture.
Switch Ninja to Oven setting of 350° & cook until eggs are done. Approximately 20 minutes. Serve with toast!
**Added comment** I used potato wedges because that is what I had on hand. I found the wedges to be a bit too big so next time I would use the smaller cubed variety.

4 cups water
4 cups quick cook oats
1 Tbs. cinnamon
¼ cup brown sugar
½ stick butter
Directions:
Turn your Ninja to Stove Top High to boil water. Add oats and stir. Turn off the Ninja.
Add cinnamon and brown sugar, stir. Add the butter on top and let it melt, then stir. Scoop into a bowl and add milk. (We use fat free). Next time I'm going to add some chopped pecans or walnuts and use almond milk.

Ingredients:
1 bag frozen Hash browns (26 ounces)
12 eggs
1 cup milk
1 tablespoon ground mustard
16 oz rolled sausage or bacon
Salt and pepper, to taste
16 oz shredded cheddar cheese
Directions:
Turn your Ninja to Stove Top High and fry the bacon and / or sausage, drain grease. Remove bacon to cool. Take the Ninja pot out of the unit, and wipe or wash out. When cooled and dry, spray the Ninja pot and spread hash browns evenly in bottom. Crack the eggs in a large bowl and mix well using a whisk. Add the milk. Sprinkle in the ground mustard, salt and pepper. Add meat to top of the hash browns. Now, is 16 ounces of shredded cheese enough? Maybe? Probably! Throw the whole bag in there! Mix it all up well. Or good, depending on where you're from.
Pour egg mixture on top of everything, using a wooden spoon to spread it out evenly. Turn your Ninja to slow Cook Low for 7-8 hours.
That’s it! Now go to bed!
**So, I let it cook for 6 hours and 30 minutes. It turned out wonderful. I only used 8 ounces of cheese due to an error in shopping lol, next time I won't make that mistake. Some people are still sleeping here, so I will let it cook for another 90 minutes so it reaches the 8 hour mark and see how it turns out.
So it didn't make it to 8 hours. Everyone else woke up to the smell and now it's all gone it was wonderful all the way to 7¼ hours on Slow Cook Low.

Cheesy Baked Hash Brown Patties
Serves: 9
Ingredients:
4 red potatoes
½ cup butter, melted
1 cup cheddar cheese, shredded
2 eggs, whisked
¼ cup chives, chopped
1 tablespoon garlic salt
1 teaspoon oregano
½ teaspoon pepper
oil – for Ninja pot
Directions:
Peel and grate the potatoes.
Drop shredded potatoes into a large bowl of ice water to remove surface starch.
Strain or squeeze potato shreds and transfer to a large bowl.
Add butter, cheese, eggs, chives, garlic salt, oregano, and pepper in with the shredded potatoes. Mix together.
Take a handful of the mixture and pack it on a baking sheet into desired hash brown shape.
Turn the Nina to Stove Top High. Add a little oil. Brown on both sides until crispy, turning gently. Allow to cool for 5 minutes.
Serve warm and enjoy!

Cheesy Eggs
Ingredients:
3-4 cups cheese

Spray the Ninja baking pan with Pam. Put the diced peppers on bottom of pan followed by cheese, eggs and bacon bits. Turn to Oven setting of 350° for 30 minutes.

I added small cubes of diced ham, a small amount of frozen O'Brien potatoes, red and orange small diced peppers and skipped the jalapeño. I only used about ½ cup cheese. The middle wasn't quite set after 30 minutes so I turned up to 375° for another 10 minutes. Delicious.

¾ cup dried tart cherries
1 apple, peeled and grated (approximately 1 cup grated); or ½ cup unsweetened applesauce
2 cups unsweetened vanilla almond milk
1½ cups water
1 cup uncooked steel-cut oats
2 tablespoons brown sugar
1½ tablespoons butter, cut into 5-6 pieces, optional (omit or substitute margarine for lactose-free, vegan)
½ teaspoon almond extract
1 tablespoon ground flax seed
¼ teaspoon salt
Optional garnishes: toasted sliced almonds, maple syrup, additional almond milk or butter
Directions:
Coat inside of the Ninja pot with cooking spray. Add all ingredients (except optional toppings) to the pot. Stir. Cover and cook on Slow Cook Low for 7 hours. Spoon oatmeal into bowls; add optional toppings, if desired. Store leftovers in the refrigerator. Freezes well.
To reheat single servings: Put 1 cup cooked oatmeal in microwave proof bowl. Add 1/3 cup almond milk. Microwave on high for 1 minute; stir. Continue cooking for another minute, or until hot.
Recipe can be doubled in the Ninja. Increase cooking time 1 hour.
Use regular steel cut or Irish cuts; not rolled or old fashion.

I saw this recipe this morning in the Savannah news. I made it for breakfast - great way to use up that leftover corned beef that we all cooked on Monday. It turned out great and we loved it. Once the hash was about done, I scooted it to the side and did eggs for us on the other side. Didn't take time to take a picture but it did turn out great! I hope I can remember to do this again when I cook corned beef and cabbage!
I used frozen hash browns that are cut in little squares like what the picture shows above. I'm all about easy!
Serves 4
Ingredients:
2 tablespoons bacon drippings, unsalted butter, or vegetable oil
1 cup (about 1 medium) yellow onion, peeled and diced small
2 cups (about 1 pound) potatoes cut in 1/2 inch dice
1 large clove garlic, minced
2 cups cooked corned beef cut in 1/2 inch dice
1 tablespoon fresh thyme leaves or 1 teaspoon dried
½ cup thinly sliced green onion
Worcestershire sauce
Salt and whole black pepper in a mill
1 tablespoon chopped fresh parsley
4 large eggs, optional
2 tablespoons white wine vinegar (optional: only if poaching eggs)

1. If serving with poached eggs, put 2 inches water in large saucepan, cover, and bring to a simmer over medium heat. If not serving with eggs or if cooking eggs in hash (see step 4), omit this step.
2. Melt fat in large nonstick skillet over medium heat. Add onion and sauté until translucent and softened but not colored, about 3-4 minutes. Add potatoes and toss to coat with fat. Sauté until hot, tossing, and then add splash of water, cover, and cook, uncovering and stirring occasionally, until potatoes are barely cooked through.
3. Uncover, return heat to medium, and add garlic. Toss well and cook until potatoes are beginning to color. Add corned beef, thyme, and green onion, and season to taste with Worcestershire, salt, and pepper. Press flat with spatula. Cook until bottom is brown, about, 4 minutes, then turn in chunks with spatula and brown the second side, pressing chunks together, about 3-4 minutes longer. (If liked, eggs can be cooked directly in hash: make 4 wells in hash after second side begins to brown and break 1 egg into each well. Cover and cook until eggs are done to your liking.) Turn off heat. Turn out onto warm serving platter, sprinkle with parsley, and serve at once with green salad and bread of choice.
4. If poaching eggs, have water bubbling briskly but not at hard boil. Add vinegar. Break eggs 1 at a time into small bowl and slip into pan, gently folding egg in on itself with slotted spoon. Poach until done to taste, about 1 ½-2 minutes. Lift eggs out with slotted spoon, gently blot with paper towel, and lay on top of corned beef and serve at once.
Making it your own and adapting to what you have on hand
As I said, the great thing about hash is that it’s so adaptable. You can add other leftovers from the boiled dinner, other ingredients (depending on your personal tastes), spice it up, tone it down – you get the idea. Here are a few notes and variations:
Some cooks like to add green or red bell pepper (or a little of both): allow 1 large sweet bell pepper stemmed, cored, trimmed of inner membranes, and diced, or half a red and green pepper.
Leftover potatoes: if you have leftover potatoes that you’d like to use instead of raw potatoes, cut them into ½ -inch dice while they’re still cold. You will need 2 cups. Omit the steaming stage in step 2, and add the potatoes to the pan along with the garlic in step 3.
Notes for cabbage and carrots from corned beef and cabbage: roughly chop or dice the cabbage and carrots and allow about a cup of each for the amounts given here. Add them after the potatoes begin to color in step 3 and let them heat through before adding the corned beef.

2 strips bacon
4 Tbs heavy cream or half and half
4 eggs

Optional add ins: anything taco! Black olives, jalapenos, tomatoes, etc. Top with sour cream and guacamole!

I just did double baked eggs in large and small ceramic ramekins covered in shredded Colby jack cheese covered, on Oven setting of 400° for 15 minutes. The large one was done; the small one was not. Double one was yummy and good sunny side up. Add 1 cup of water in bottom of crock, with the ramekins on the rack. One other note, I did spray 1 ceramic with Pam & 1 was not. The one without did stick! I also used “ove gloves” to remove ceramics.

Spray your silicone baking pots with Pam and add 2 eggs, seasonings, bacon and cheese per pot. Place your rack and add the baking pots. Cover with lid. Baked 400°, for 20 minutes. They came out perfect. Topped with more cheese and salsa.

Ingredients:
1 package (9.6-ounce bag) Jimmy Dean Sausage Crumbles
2 packages (2.64 oz each) McCormick’s Original Country-Style Gravy Mix (or McCormick’s Sausage-Flavored Country Gravy Mix)
4 cups cold water
Salt, pepper, garlic powder, rubbed sage – to taste (optional)
Directions:
Place entire bag of sausage crumbles in the Ninja pot and turn on Stove Top High. Let this cook until the sausage starts to sizzle. Add both packets of the gravy mix to the sausage in the pot and gently stir to coat all of the sausage pieces. Pour in the cold water. Stir to combine. Continue to stir the mixture regularly until the mixture starts to thicken, being sure to stir out any lumps and not letting the gravy stick to the bottom. Once the gravy thickens, turn the Ninja to buffet. Add any extra seasonings to the gravy to taste and stir to combine. Put the lid on the Ninja. Stir the gravy occasionally to ensure that it doesn't stick to the bottom. The buffet setting will keep the gravy warm while you bake your favorite biscuits or toast to serve the gravy over.

Bagels of choice (we used everything bagels)
6 eggs
3 slices cheese
Splash extra version olive oil

Prep:
Mix eggs, seasoning, and cheese (break cheese into bite size pieces) - set to the side
Slice bagel in half - set to the side
Preheat the Ninja on Stove Top High for 5 minutes
Recipe:
1) Add bagel halves to the Ninja and toast them to taste. Once done, remove from the Ninja.
2) Add the egg mixture to the Ninja pot. Cook until done. Remove, and turn off the Ninja.
3) Add bottom portion of the bagel to the Ninja pot. Top with the eggs. Place the top bagel to make your sandwich. **this is to lightly reheat the bagel in case it cooled down.

Eggs, scrambled – amount for your family
Directions:Spray your muffin tin with your choice of non-stick spray or oil. Place 3 tots per tin. Turn your Ninja to the Oven setting of 425°F and place your rack, pyramid mat or red silicone rack. Place the tin on top. Place the lid. Cook for 10 minutes. After time is up, carefully sprinkle in the vegetables of choice. Pour your scrambled eggs so the tin is about ¾ full. Sprinkle on the bacon. Place the lid. Bake for an additional 25 minutes.
When cooled, wrap and you will have for quick breakfast to reheat for on the go mornings during the week.

OK.. I've said it before, but I need to repeat it!!! If you haven't fixed "eggs" in the Ninja, then it is a must! Scrambled come out so fluffy! If you like over easy, medium or hard, they come out perfect and in less time than on the stove. I do preheat on Stove Top High for about 5 minutes; then turn to Stove Top Low. Add a little butter and wonderful, absolutely wonderful!!! In my 2nd Ninja, I browned the ham and hash browns and moved to Buffet setting while fixing the eggs. Bob had the toast and coffee ready as the eggs were finishing up.

Bring one jar of marinara or spaghetti sauce to a boil in the Ninja. Drop as many eggs as you would like into the sauce. Do not stir. Cook them for about 8 minutes on Stove Top Medium. (If you have the Ninja 4, I suggest bringing to a boil on Stove Top High and reduce to Stove Top Low. Increase the cooking time by a few minutes). That's it! You have a complete meal. There are many options for this meal. You can add hamburger, onion, and garlic and brown on Stove Top High before adding the sauce. (Drain excess grease if necessary before adding sauce). It is also good with cheese on top. I haven't tried it with veggies but that would be yummy too.

Oh man, this was so good I made it two days in a row. It's a spinach and egg and cheese dish that's so rich I could only eat two pieces of it.
Ingredients:
1 pound of breakfast sausage
2 medium onions, chopped
1 red bell pepper, chopped
can of spinach, well drained
8 jumbo eggs
4 oz of shredded sharp cheddar cheese
½ cup of feta cheese.
two 12 oz packages of bacon that I cooked and crumbled, an alternative to the sausage
Directions:
Turn your Ninja to Stove Top High and brown the sausage until done. Break up like you would for chili or Sloppy Joe's. Turn off Ninja. Drain well and place back into the Ninja pot. Add the onions and bell pepper. Make sure the spinach is well drained and add. Mix well
Crack the eggs into a bowl, and whip with a fork for at least a minute. Slowly pour over the ingredients in the pot. Pick the pot up and jiggle gently until everything is evenly spread out. Top with 4 oz of shredded sharp cheddar cheese and half a cup of feta cheese.
Cook for 2.5 hours on Slow Cook Low. This smells great while cooking. This is good coming out of the pot, and even better for breakfast the next morning.
Letting it sit in the fridge overnight makes it even more flavorful. The second day I used two 12 oz packages of bacon that I cooked and crumbled, and it was just as good as the sausage.
**Added comments by: - S Alfred Baker Parmesan would be good on this. Set the timer, don't go longer than 2.5 hours or the eggs will get tough. And pour the eggs into the other ingredients, don't mix it around after you do this. Pour the eggs in, jiggle it a little and let it be.
**Kathleen Sanden - Just cut up fresh spinach and add, it does cook down. I use fresh spinach in many recipes including the lasagna from the cookbook. It is much milder when it's fresh.

Dip bread slices into milk mixture and then place into pot that was either buttered or sprayed with PAM. Brown each side. (The Ninja will take 2 slices at a time giving you room to turn.) Top with powdered sugar and or syrup.

pinch of salt

Cut your bread and place in the multipurpose pan. Sprinkle your cinnamon sugar mix over all. Pour the egg mixture of: beaten eggs, milk and salt over all and press into the bread to cover and soak into the bread. Place the pyramid mat in the Ninja pot. Place the pan on the mat. Turn your Ninja to 325°F and bake for 40 minutes. A few minutes before serving, sprinkle white sugar over the top.
Easy to make more or less as it’s all in equal quantities! Add some sultanas or chocolate chips to make it more interesting!

Ingredients:
8 eggs
2 cups milk
1 tsp. cinnamon,
½ tsp. nutmeg
1 loaf of French bread, cubed
1 cup brown sugar and 1 stick butter-melted together, topping
Directions:
Beat eggs, milk, cinnamon, and nutmeg together. Put cubed French bread into a bowl and pour mixture over. Place the lid turning the bowl so it all gets absorbed and put in the refrigerator for 6 hours. Pour into the Ninja, and put the brown sugar mixture on top. Turn your Ninja to the Oven setting of 300° for 45 minutes. Turn to Slow Cook Low to keep hot.

6 slices of cinnamon swirl bread, (you can use any bread of your choice)
5 eggs beaten
1 banana
Spray the utility/baking pan and place 2 whole slices of bread and a half slice in the pan. Slice banana and place on top. Add the 2nd layer of bread on top. Pour eggs over bread, lift bread so eggs go under bread and flip if necessary to ensure all bread is coated. Place in refrigerator overnight. Preheat your Ninja Oven to 350° for about 10 minutes. Place your rack and your pan. Bake for 30 minutes. Top with your favorite topping & enjoy.

Ingredients:
12 turkey sausage links, cut into small pieces
2 cups broccoli florets, cut into small pieces
Large handful of spinach, chopped up
12 eggs
Splash of hot sauce and a bit of half and half
Garlic salt
Garlic pepper
2 large handfuls of shredded cheese
Directions:
Turn your Ninja to Stove Top High and start browning sausage. After a few minutes add the broccoli and cook together for a few minutes. Add the spinach and continue cooking for a few minutes.
Beat eggs, half and half, hot sauce and salt and pepper.
Add the cheese to the eggs, stir and pour over the meat/veggie mixture
Turn your Ninja to the Oven setting of 400°F. Place the lid.
Cook for about 15 minutes, or until set.

Frittata with Kale, Roasted Red Pepper, and Feta*, By: Jessica Conol
Ingredients:
1-2 tsp olive oil to saute the kale (only 1 teaspoon for the Ninja, but 2 teaspoons to saute on the stove.)
5 oz. baby kale
non-stick spray or oil (to spray the slow cooker if you don't use the Ninja)
6 oz. roasted red pepper (from a jar), diced fairly small
1/4 cup sliced green onion
4-5 oz. crumbled Feta
8 eggs, well beaten
1/2 tsp. Spike Seasoning (or other all-purpose seasoning blend)
fresh-ground black pepper to taste
low-fat sour cream for serving (optional, but good)
Directions:
Wash kale if needed, and spin dry or dry with paper towels. Heat the oil, either in the Ninja on the Stove Top High. When the oil is hot, add the kale and sauté until it's softened into a flat layer, about 3-4 minutes in the Ninja. Turn the Ninja to Slow Cook Low setting.
Drain red peppers and chop into fairly small pieces. Slice the green onions and crumble the Feta. Add the chopped red pepper and sliced green onion to the Ninja with the kale. Beat the eggs well, pour over other ingredients and stir so all ingredients are well-combined. Season with Spike Seasoning and black pepper, then sprinkle on the Feta.
Cook on Slow cook Low for 2-3 hours, or until the frittata is well set and cheese is melted. (I cooked mine for 2 hours and 45 minutes and it was perfect, but I got distracted with a phone call and it may have been done slightly sooner than that. I think the Ninja cooks a little hotter than other slow cookers, so it may take slightly longer if you don't use the Ninja.) Serve hot, with a dollop of low-fat sour cream if desired.
This will keep well in the fridge for several days and can be reheated in the microwave. (Don't microwave too long or it will get rubbery.)

Frittata with Hash Brown Potatoes & Bacon, Ninja Recipe Book
Ingredients:
2 tablespoons canola oil
1 large onion, chopped
1 large green pepper, chopped
4 strips turkey bacon, chopped
½ of a 32-ounce package frozen diced hash brown potatoes(about 3½ cups)
12 eggs
¾ cup low-fat milk
½ teaspoon salt
¼ teaspoon ground black pepper
1 cup shredded low-fat cheddar cheese
Directions:
1. Pour oil into pot. Set to Stove Top High and heat oil. Add onion, green pepper, and bacon to pot. Cook uncovered 15 minutes or until vegetables are tender, stirring often.
2. Stir in potatoes. Cover and cook 5 minutes.
3. Beat eggs, milk, salt, and black pepper in a bowl. Set pot to Stove Top Low. Stir egg mixture and cheese into pot. Cover and cook 10 minutes or until the egg mixture is set.
Ninja Serving Tip:
Serve topped with additional chopped cooked bacon, if desired.
